Description
The Culinary Skills course is designed to provide learners with the practical skills, knowledge & attitudes relevant to gaining employment as third year commi chefs in the catering industry. The course emphasises practical skills that are complemented by theory throughout the duration of the course. The course also provides an extended period of work experience placement in the catering industry.
Modules
Principles of Cookery, Menu Planning, Health & Safety, HACCP (Health Standards), Nutrition, Kitchen Technology, Breakfast Cookery, Hot & Cold Desserts, Pastry, Ethnic Cookery, Healthy Options, Deli/Larder.
